Most are, by recipe: 21 of our 26 have no gluten in the recipe, but all 21 may contain it. Biscoff & chocolate, Banoffee pie, Oreo, Carrot cake and Apple strudel contain gluten, and the table on the allergens page marks each one. But ours is not a gluten-free kitchen. We bake cookies and brownies with wheat flour in the same room, so we cannot promise a shell has never met a trace of it. If you are ordering for a coeliac guest, say so in your enquiry and we will tell you plainly what we can stand behind. ### Why are macarons filled a day in advance? Macaron shells are filled a day before they reach you and left to mature overnight in the fridge. The moisture moves from the filling into the shell, so the inside turns soft while the outside stays crisp. A macaron filled the same morning has not had time to do that. ### Do macarons contain nuts? Yes. Every macaron shell is made with almond flour, so none is suitable for anyone with a tree-nut allergy. Pistachio & raspberry, Ferrero, Blue cheese & pear and Parmesan & cashew contain tree nuts as well as the shell's almond flour. Every macaron may also contain peanuts. ### How long do macarons keep? Seven days, kept in the fridge. ### Can macarons be made vegan? No. The shell is egg white, almond flour and sugar, so a macaron cannot be made vegan. We do, however, offer selected vegan cookies, which may contain milk and eggs. ### How far in advance should I order? Three days for local pickup in Edinburgh. One week for delivery anywhere in the UK. Three weeks for large orders: more than 60 macarons, or 20 or more cookies or brownies. ### Do you offer bulk prices? Yes.
